Domaine Pero Longo has been bio-dynamique since 2000 and grows only corsican grape varieties. The entire estate works with low yields en takes the grapes to perfect maturity, here you don’t haste nature you respect nature and wait for it. Quantity is not what Pierre is looking for, only quality counts.Obvisously all this is done without any additifs and only hard work makes these wines so special. The naturally present yeast on the grapes starts the fermentation and then the wine is aged on lees in egg shaped concrete tanks. These tanks favor the fluid inside the tank to mix with the lees, try it and you will be convinced.
