Terrasses du Larzac, a PDO since 2005, reveals a unique winemaking landscape with over 100 winegrowers cultivating Syrah, Grenache, Mourvèdre, Cinsault, and Carignan. Nestled in the Côteaux du Languedoc, the region’s high vineyards on the Cevennes slopes yield exceptional red wines. The appellation covers St-Saturnin and Montpeyroux, praised for their exciting crus. It encapsulates the villages of Aniane and Jonquières, homes to renowned wineries like Mas de Daumas Gassac and Mas Jullien, sparking a renaissance in Languedoc wine.

Stretching across the north of Hérault, Terrasses du Larzac, with its asymmetrical V shape, boasts diverse topography, from the Larzac plateau to the Séranne mountains. The climate, with wide temperature variations and cool summer nights, contributes to slow grape maturation, enhancing colour and aromatic qualities.

The production rules mandate grapes from approved land parcels, with a minimum of two grape varieties, including Syrah, Grenache, and Mourvèdre, (60% minimum). The wines must have over 12% alcohol, yield no more than 45 hectoliters per hectare, and adhere to specific vine planting and pruning criteria.
